A fruity and crispy wine
The DOCG of Cavallini, issued from the old vineyard of Poggio Campana. Sangiovese 85% blended with Alicante (grenache noir) and Ciliegiolo fermented in stainless steel with indigenous yeast. A crispy and refreshing fruity wine, nicely mineral and long lasting.

Hand harvested in Poggio Campana vineyard. Spontaneous fermentation with indigenous yeast in steel, 1 week post-fermentative maceration. Elevation in steel for 6 month.
